Summer soup «Holodnick»


Cooked beets — 5 pcs (0.9-1 kg);
Water — 1.7-2 liters;
Kefir — 0.8-1 liters;
Onion (or green) — 3 pcs (300 g);
Fresh cucumber — 4 pcs (500 g);
Salt — about 1 tbsp + 1 tsp .;
Sugar — 2-3 tsp .;
Dill — 1 bunch;
Sour cream — optional;
Cooked egg — on request;
Pan volume of 5 liters.


The first thing you need to cook beets. Then, boil the water and chilled water mix with yogurt in a large pot (at least 5 liters). Kefir can be used either — your favorite.

Initially, mix 1.7 liters of water with 0.8 liters of yogurt and at the end of the cooking «Holodnick», add the remaining yogurt and water, if necessary, to taste. Clean and rub cooked beets. It can grate on ordinary grater or cut into thin stripes. Add the beets in a pot of yogurt and water. Then, add the salt and sugar. It’s all to taste, try, «Holodnick» should be moderately sweet and salty.

Finely chop the onion. You can replace the usual onions — green. Add to the «Holodnick». Then cut the cucumber into small pieces. If you have a tough skin, it is best to cut it. And adds «Holodnick». Add the chopped dill.

All mix well, trying. If necessary, add water, sour, salt and sugar.

We send in the refrigerator to cool. Serve with sour cream and half a boiled egg.
