Fillet of salmon (salmon, trout, chum, sockeye salmon) 800 g
Sea salt 1 tsp
Ground black pepper 1/3 tsp
Lemons 1/2 pcs.
Cream 300ml 10-11%
Egg yolk 3 pcs.
Dijon mustard 2 tsp
Basil fresh green 10 g
Dill 10g
Parsley 10 g
Tarragon 10g



This fish dish is always sought and quickly prepared. Salmon will turn out tender and flavorful, but this way you can prepare almost any fish. Additionally, you can spice cream sauce with grated horseradish, curry, fresh coriander and saffron.
The most appropriate side dishes to this dish — crumbly rice, boiled potatoes or pasta with herbs «talyattelle.»
If you want to choose the right wine for this dish, choose a wine with a complex flavor, delicious, medium density, which can complement the fish sauce and herbs. For example, the classic Muscadet de Sevre et Maine sur Lie or elegant Riesling.
Salmon fillet cut into oblong pieces of 4-5 cm in width, place in a shallow baking dish. Try to stack the fish firmly, do not leave large gaps between pieces, or require too much sauce. Season with salt and pepper and sprinkle with lemon juice.
In a bowl, combine the cream and egg yolks.
