Potato «zrazy» with minced meat

Try to find a special «potato for baking» for this dish — such varieties keep their shape much better.


Potato — 1 kg
Onion — 1 pc.
Minced beef or pork — 500 g
Milk — 300 ml
Fat Cream — 100 ml
Eggs — 2 pcs.
Butter — 5 tbsp.
Flour — optional
Vegetable oil — optional


1. Peel and chop the onion very finely. Melt a little oil in a pan, put onions and fry for 5 minutes. Add the minced meat. Boost the heat, fry, breaking the minced meat with a wooden spoon so that it does not stick together into lumps until the color changes. Remove from heat, salt, pepper and cool.
2. Wash the potatoes and cook in boiling salted water until soft. Drain and pour potatoes with cold water.
3. Peel the potatoes, cool. Grate, mix with beaten eggs, melted butter (2 tablespoons), salt and pepper. Pour in so much flour to make a dough of medium density (so that you can sculpt it).
4. With wet hands, make round flat cakes out of potatoes. In the center, put the minced meat, form round cutlets.
5. Roll the patties in flour and fry in vegetable oil under the lid until golden brown on both sides.
6. At the same time, fry in a saucepan in 3 tbsp. butter and 2 tbsp. flour to beige. Pour in the milk, stirring constantly, cook until thickened. Add cream, salt and pepper. Serve potato zrazy with sauce.
