Pancakes with cheese and mushrooms



Milk — 350 ml
Flour — 100 g
Butter — 50 g
Egg — 1 pc.
Egg yolk — 1 pc.
Salt — 1 pinch


Mushrooms — 300 g
Onions — 1 pc.
Garlic — 2 cloves
Butter — 1 tbsp. l.
Blue cheese — 100 g
Cream — 3-4 tablespoons. l.
Massandra — 2 tbsp. l.
Hard cheese — 50 grams
Cumin — to taste
Oregano — to taste
Black pepper — to taste
Salt — to taste


1. Melt the butter. Sift the flour with a pinch of salt. Add the flour and the egg yolk, milk and melted butter. Stir the dough. Leave the dough for 30 minutes, then bake pancakes.
2. Chop the onion, garlic and mushrooms. Melt the butter. Sauté onion and garlic until golden brown. Add the mushrooms, salt and pepper. Then add the cumin, oregano, Massandra, 1-2 tablespoons cream, cut into small cubes of blue cheese. Mix and boil down gently.
3. Put the filling on crepes and roll them. Place the pancakes in a refractory form, pour the cream on top and sprinkle with remaining cheese. Put in a preheated 180 C oven for 10 minutes.
