Mushroom soup with meatballs


For the soup:

400 grams of mushrooms
2 large potatoes
1 carrot
1 onion
a few feathers green onions
cream for the filling (optional)
salt and pepper to taste

For the meatballs:

200g pork mince
25 g salted pistachios peeled
2 cloves garlic
a couple sprigs of parsley
1 egg
salt and pepper to taste


Pistachio nuts, garlic and parsley chop finely, mix with minced meat and egg, salt and pepper to taste. The resulting minced put in the fridge for 10 minutes. Mushrooms cut into slices.

Onions cut into half rings, and carrots and potatoes — cubes. Stuffing from the refrigerator, divide it into 18 pieces and roll small meatballs. We fry them in a pan on a small amount of vegetable oil until golden brown. Remove and set aside on a plate aside. In the same pan, where grilled meatballs, for 6 minutes fry the onions and carrots.

Then add the mushrooms and cook for another 5 minutes. Add the vegetables to the pot of 1.5 liters of hot water, put the potatoes, bring to a boil. Salt, pepper, reduce the flame, cover with a lid and cook for 10-15 minutes, until almost fully cooked potatoes.

Then add in the meatball soup, warm up for 5 minutes. The soup is ready!
When serving sprinkle with chopped green onion and dressed with sour cream.
