Marshmallow sticks made from apples with cinnamon and cranberry

Ingredients:

Applesauce — 550 g
Cranberry sauce (if Cranberry frozen, defrost, drain the excess water and then just mash) — 200 g
Sugar — 600 g
Egg whites (about one egg) — 30 g
Ground cinnamon — 1 tsp

For syrup:

Agar — 15 g
Water — 150 g
Sugar — 480 g

Preparation:

1. Bake until puree purified (from the seeds and peel) apples in a sealed container with a couple of tablespoons of water in the oven or in the microwave.
2. Stir in cranberry sauce (cranberries through a sieve), cinnamon and sugar, mix blender until a homogeneous smooth puree.
3. Pour water agar, add sugar and mix. Boil syrup to 117C.
4. In the apple-cranberry sauce add egg white and start beating when the syrup comes to about 110C. Pour a thin stream of hot syrup (117C), continuing to whisk a couple of minutes.
5. Pour into the laid film shape (size of about 30 by 35 cm), leave overnight. Remove from the mold, cut into strips, roll in powdered sugar, put on the rack to dry biscuit.
When dry up, to shift in an airtight container lined with baking paper.
