Mackerel tea brined


2 large frozen mackerel (I unfortunately was not big — had to buy three)
4 tablespoons of tea (tea leaves)
4 tablespoons salt
4 tablespoons of sugar.


Fish defrost, wash, cut off the head and clean from the inside, rinse well.

Boil the brine: tea leaves to fill in 1 liter of boiling water. The cold tea, add salt, stir well, add sugar and stir again vigorously.

Put the fish in the brine and refrigerate for 4 days. Remove from the marinade, rinse by welding, hang above the sink at night (as in the recipe, I simply put upright in a high narrow circles). Once drained, wrapped in a paper bag and store in the refrigerator.

I could not «keep refrigerated» — barely had time to take pictures of the fish and a second tail first. Because eaten instantly — just like the taste of smoked mackerel! But it turned to be seen — what turned out «goldfish»
