Echpochmak (triangular pies with potatoes and meat)



Flour — 850 grams.
Milk — 500 ml.,
Eggs — 2 pcs.
Yeast (dry) — 5 grams.
Butter — 70 oz.,
Sunflower oil — 1 tbsp.
Salt — 1 tsp
Sugar — 1 tbsp


Beef — 800 grams.
Potatoes (large) — 6 pcs.
Onions — 4-5 pcs.
Salt and pepper — to taste
Beef broth — 0.5 liters.
Egg products for lubrication — 1 pc.


In the warm milk dissolve yeast, add the melted butter, vegetable, eggs, salt, sugar, all stir, add flour and knead the dough.
The dough is wrapped in a plastic bag (not tight) and leave at the time (on the kitchen table), while we prepare the filling.

For the stuffing meat and potatoes cut into cubes with side 1 cm., Bulb onion — small cubes, salt and pepper to taste.
«Rested» knead the dough again and divide into equal pieces, about the size of a small tangerine, about 16-18 pcs., Roll out pieces of cakes, the size of a saucer, put the filling in the middle, and the blind cakes in the shape of triangles with a hole in the middle. This hole we will need in order to pour the broth during baking.

Ready echpochmak lay out on a baking sheet, greased.
Baking put in a preheated 200 gr. oven and bake for 5 minutes, then turn down the temperature to 170 degrees and bake for 20 minutes. Remove the pan from the pie, brush the egg, pour in, in holes, soup (much as you like), and put in the oven for another 20 minutes.

Everything! We serve hot with beef broth. Visitors can add more broth cakes or drink them.
