Chicken Soup with Cheese Balls and Potatoes

Soup according to this recipe is prepared in chicken broth and supplemented with mouth-watering cheese dumplings. Such a delicious, aromatic and hearty chicken soup with cheese balls like both adults and kids.


(For 7 servings)
Chicken fillet — 400 g
Potatoes — 450 g
Carrots — 120 g
Onion — 100 g
Vegetable oil — 45 ml
Fresh parsley — 25 g
Salt — to taste
Ground black pepper — to taste
Bay leaf — 2 pcs.
Water — 2.3 L

For cheese balls:
Hard cheese — 100 g
Flour — 100-130 g
Butter — 50 g
Chicken egg — 1 pc.
Fresh parsley — 15 g
Salt — to taste


1. Prepare the necessary products. We remove the butter from the refrigerator in advance so that it softens.
2. Chicken fillet cut into pieces and pour in water in a saucepan. Bring the water to a boil, remove the formed foam. Reduce the heat, add the bay leaf and cook
broth 30-40 minutes.
3. We rub cheese on an average grater.
4. Parsley leaves finely chopped. Leave some greens for serving soup.
5. Slice butter into small pieces. In a bowl, combine cheese, flour, pieces of butter, egg, parsley and salt.
6. Knead soft dough. The consistency of the dough will be reminiscent of shortbread. Cover the dough with foil and put in the fridge for 30 minutes.
7. Peel the onions and cut them into small cubes. We clean the carrots and rub them on a coarse grater.
8. Heat vegetable oil in a pan. Fry the onion for about 4 minutes, until transparent. After that, add carrots to onions. Onions and carrots fry for another 4-5 minutes, until golden.
9. Potatoes are peeled and cut into small pieces.
10. From the broth, take out the bay leaves, add the potatoes and cook for 10 minutes.
11. From the refrigerator we get dough. We form small balls the size of a small nut.
12. Add cheese balls to chicken soup. Give boil, reduce the heat and cook the soup with cheese balls on a small fire for another 8-10 minutes.
13. 5 minutes before readiness add salt and black pepper to taste.
14. Cheese balls soup is ready. Pour the soup into plates, add chopped parsley to each portion.
