Alfredo with broccoli and chicken


• 250 grams of pasta rotini
• 350 g broccoli florets
• 1 tablespoon olive oil
• 2 chicken breast without skin and bones
• Salt and black pepper
• 2 tablespoons unsalted butter
• 2 tablespoons of flour
• 3/4 cup chicken broth
• 3/4 cup milk
• 1/4 cup heavy cream
• 1/4 teaspoon garlic powder
• 1/4 cup grated Parmesan cheese
• 2 teaspoons fresh chopped parsley


1. Cook the pasta in a large saucepan of boiling salted water according to package directions. Two minutes until cooked, add broccoli. Drain.
2. Heat the olive oil in a large skillet over medium heat. Salt and pepper the chicken, put in a pan and fry each side for 3-4 minutes or until tender. Let cool, then cut into small pieces.
3. Melt the butter in a skillet over medium heat. Stir in the flour, stir for about a minute, until the mixture is golden brown. Gradually add the broth, milk, cream and garlic powder. Mix well until smooth.
4. Add the Parmesan and stir. If the mixture is too thick, add more milk.
5. Gently mix the pasta, broccoli, chicken, salt and pepper to taste.
6. Sprinkle with parsley and serve.
